Best Soup For a Cold – Immune Booster!

Roast Chicken, Kale and Lentil Soup

Serves 4 – 6

1 tbsp olive oil

2 Sticks Celery, finely diced

2 Carrots, finely diced

1 Onion, finely diced

5 cm cube Fresh Ginger, finely chopped

1 Bunch Flat Leaf Parsley, finely chopped, including stems

4-5 Cloves Garlic, crushed

1 tsp Turmeric

1/2 tsp Cayenne Pepper

1 T Tomato Paste

1 1/2 cups Lentils, rinsed

8 cups Chicken Broth

3 Large Leaves Kale – stem removed and chopped

1/2 Organic Rotisserie Chicken, meat picked and shredded

  • Heat the olive oil in a pot over medium heat
  • Add the diced veg. Allow to cook for 5 mins, until slightly browned
  • Add the crushed garlic and ginger, stir through and cook for 1 min
  • Next, add the parsley, turmeric, cayenne pepper and tomato paste, stir through
  • Add the lentils and 6 cups of the chicken broth (the rest will be added later)
  • Stir through, bring to a boil and then cover the pot. Reduce the heat
  • Allow to simmer gently for about 20 mins, until the lentils swell and start to soften – don’t overcook. They should still have a slight bite. Think “al dente”
  • Add the remaining broth to create a more soup-like consistency
  • Stir in the chopped kale and cook for 5 mins
  • Add the shredded chicken, season to taste and serve

Option: I like to keep it as a chunky soup but if you like you could blend the whole thing before serving. Just don’t be deterred by the color!
