Easy Overnight Oats

I love the simplicity of this easy overnight oats recipe. It’s so quick to make and can be kept in the fridge for up to 5 days so you can make a big batch for the week and have a delicious and healthy breakfast ready for you when you roll out of bed. And, they’re gluten and dairy free!

I made this dish on my recent camping trip to The Kruger National Park. It’s actually a perfect meal to make and take with you camping or on the go. It’s just one jar! Full of nutrients and flavour, it packs all the energy you need for a full day of safari and animal spotting. It’s also super versatile as you can add whatever extra flavouring or topping you like. I like to add dates as they give a nice natural sweetness. Use this easy overnight oats recipe as your base and each day you can change it up with different toppings. Think nuts and seeds, peanut butter, banana and cacao, mango and coconut or even naughty Nutella! Get creative, give it a try.

Easy Overnight Oats Recipe


Makes 6 portions

2 cups gluten free rolled oats

2 cups almond milk

1 1/2 cup coconut milk (or stick to almond milk)

3 T chia seeds

1 handful chopped dates

1 green apple, grated

Extra toppings of your choice for serving: Fresh fruit, shredded coconut, nuts and seeds, cinnamon, honey etc.


Mix all the ingredients (except the extra toppings) in a large bowl, cover and allow to soak in the fridge overnight. It’s really THAT simple. The oats and chia seeds will soak up all the liquid and you will be left with a nice thick porridge. Pack it into a jar and take it with you on the go. A perfect healthy breakfast. Enjoy!
