Vegetarian Chili Recipe

This delicious vegetarian chili recipe recipe is packed with flavour and colour and is a sure crowd-pleaser. It’s way better and healthier than the normal meat option. Even the boys will love this vegetarian chili recipe! You could even make it vegan by using vegan chocolate instead of regular dark chocolate. If you do desperately want the meat version then add 500g of lean mince to the pan after the veg and cook slowly for at least 45 mins to an hour – with mince it’s actually better to cook it for a longer time, like Bolognese, so it softens nicely. Or if you’re making tacos or nachos – throw on some Pulled Pork (recipe here) for added protein. The cinnamon and chocolate are key subtle flavours in the dish and the smoked paprika and chipotle bring the delicious smokiness – YUM!

Vegetarian Chili


Serves 4

1 Red pepper, seeded and diced smallimage002

1 Yellow pepper, seeded and diced small

3 Cloves garlic, minced

1 Small red onion, finely diced

2 tsp ground cumin

1 Large red chilli, or one chipotle chili, finely chopped

2 tsp smoked paprika

2 tsp ground cinnamon

1 Can Black beans

1 Can Red Kidney Beans

2 Blocks 70% dark chocolate

1 -2 Cans Chopped tomatoes

1 Generous handful fresh coriander, leaves picked, stems finely chopped

Juice of 1 lime

Maldon Sea Salt and cracked black pepper to taste


  • Heat 1 tblsp of olive oil in a large pan and sautee the peppers and onions together until softened and slightly browned
  • Add the garlic, cumin, paprika, cinnamon, chili and chopped coriander stems and sautee over medium heat for half a minute – it will start to smell really fragrant
  • Throw in the beans and the chopped tomatoes – use both tins of tomatoes if you want it more saucy
  • Let this simmer gently for about 10 mins
  • Add the dark chocolate and allow this to melt through – this will give it a subtle richness in flavour and a beautiful dark colour
  • Season to taste with salt and pepper, add some extra fresh chili if you want and squeeze over the lime
  • Garnish with the fresh coriander and serve with rice, nachos or use it as a filling for tacos with all your favourite accompaniments like sour cream, guacamole, cheese and pico de gallo – hell yes! I’m starving now just thinking about it…I’m off to the kitchen!

Blend together avocado, fresh lemon juice, finely diced red onion, fresh coriander, garlic, salt and pepper and a dollop of mayo for an awesome guacamole!
